Catering to Foodies

Cooking is now a national obsession. Celebrity chefs, such as Bobby Flay, Charlie Palmer, and Emeril Lagasse, are household names. The Food Channel dishes up 24 hours of dining a day.

Foodies, those who see eating as a hobby, hunger for culinary stimulation on vacation, too. Whether it’s a seven-day culinary tour of Tuscany or two hours making bruschetta at an Orlando resort, cooking classes are increasingly popular with vacationers. Catherine Margles, chef and president of the Creative Cooking School in Las Vegas, is working with Hilton Grand Vacations Club to develop a vacation package featuring in- room cooking demonstrations conducted by classically trained chefs. “Las Vegas has become a food town,” she says. “People who are really into food want to meet the chefs.”

The trend fits with a 2003 Travel Industry Association of America study showing that 81 percent of U.S. travelers include historical or cultural activities in vacations.
